What is a protease? A protease is an enzyme responsible for breaking down proteins into smaller peptides and free amino acids. Even if fishes and crustaceans produce proteases naturally (endogenous proteases), exogenous proteases can be given as supplements with animal feeds to complement the digestive activity.
